Weekend Baking (Banana Cake)

This weekend I used up some bananas close to being over ripe on a yummy banana cake.

I beat the sugar and butter together until fluffy and gradually added the eggs. I then added the self raising flour and cinnamon.


I then folded in the mashed bananas and vanilla essence.

Pop it in a greased cake tin and cook for 1 hour, or until a knife comes out of the sponge clean. Sprinkle a little demerara sugar on the top before it goes in the oven.

And there you have it:



175g butter
175g sugar
175g self raising flour
2 eggs
3 large bananas mashed
1tsp ground cinnamon
1tsp vanilla essence
A little demerara sugar
