I had some friends round for dinner this weekend so decided to cook a fresh summer feast. Including….
Homemade Pesto Bruschetta
I popped 90g parmesan, 90g of pine nuts, 2 bunches of fresh basil and 2 garlic cloves into the food processor. Then gradually added 180ml of olive oil to make the pesto:
I then cut in half fresh crusty ciabatta rolls and popped them under the grill for a couple of minutes to toast.
Whilst they toasted, I chopped up some tomatoes and got some rocket leaves.
I then spread on the pesto and added the rocket and tomatoes…yum!
This salad is easy and delicious! Just add to a bowl 120g mangetout, 200g chopped feta cheese, one chopped apple, one cucumber chopped with seeds scooped out, 1/2 red onion finely sliced, 2 tomatoes chopped and fresh dill and lemon thyme (we are lucky enough to have this at hand in the garden) chopped finely. Then drizzle over olive oil and the juice of one lemon and toss.
A refreshing salad.
Halloumi and Courgette Bake
Cut 400g of halloumi into large chunks and 2 large courgettes into 1cm chunks. Put into a cooking dish and grate over the zest of one lemon. The drizzle over the juice of the lemon and some olive oil and leave to marinate for 30 minutes.
Then pop under the grill for 7-10 minutes.
