Tomato, bean and lentil sausage casserole

I had a ‘using everything up’ evening the other night and made this delicious (sort of) sausage casserole.

I put the sausages and butternut squash under the grill for around 20 minutes to cook them.

Meanwhile, cook the red onion in a pan on the hob and add the mushrooms and passata and sun dried tomatoes. After 5 minutes add the lentils and cannellini beans.

Add the sage, garlic and ginger and leave to simmer for 10 minutes.

Once all cooked, put the sausages and butternut squash on a plate and cover with the tomato mixture.

Yum!

Ingredients
1/2 235g can of cannellini beans
1/2 235g can of lentil beans
8 sausages
200g butternut squash cut into small chunks
5 mushrooms chopped
8 sundried tomatoes chopped
1 can of passata
1 teaspoon sage
1cm fresh ginger finely chopped
1 garlic clove finely chopped
1 red onion chopped
